The flavors move into a salty, cracker flavor. Finally, it flows into a lemon finish, and crisply it ends. This champagne isn’t particularly cheap, but it is a treat for a special occasion. The last champagne we have to look at is the 1985 Dom Perignon. It is rich, with honey, cheesy, and even a bit floral-like. The palate is relatively intense, with a sort of woodland mushrooms, soil, lime pith and even a malty element to it. There are pockets of spice, as well. Everything swirls together and becomes delightfully satisfying.
